Getting to know Yonsei’s dairy business

YONSEI DAIRY is a company that cherishes the virtues of Yonsei University. It is owned and operated by Yonsei University, and it is well known to students by the milk that is purchasable in the school consumer cooperatives. Recently, it has gained recognition for the sales of Yonsei milk cream bread, which is well known for its abundant amount of cream inside the bread.

Introducing Yonsei Dairy

   Yonsei Dairy, which celebrated its 60th anniversary last year, is the nation's second-oldest milk processing company. The company’s visions are to value creation, human health promotion, and social contribution. As part of that effort, Yonsei Dairy formed a committee with top professors in the field of medicine, biotechnology, and food nutrition at Yonsei University, to develop unique and innovative products through an industry-academic cooperation. It also introduces itself as an eco-friendly enterprise that conducts scholarship projects and considers sustainability. In addition, as it aims to become a global food company that contributes to promoting human health, its goal is to become a company worth $1 billion by 2030[1]. 

 

The products of Yonsei Dairy

   The products of Yonsei Dairy are produced in a factory located in Asan with its Seoul office located in the Sinchon school campus. The business produces various products from milk to water. Milk, being its most popular product, has a number of variations ranging from lactose-free milk to sterilized strawberry milk. Yonsei Milk is well known for its fresh taste and reliable quality as it owns a private ranch. In 2022, Yonsei Dairy's "Exclusive Ranch Yonsei Milk" won three stars, the highest taste award, for the second consecutive year at the recent Superior Taste Award[2]. Yonsei Milk, which received three stars in a row in the two-year competition, is only made by the highest grade A milk that has passed the rigorous inspection among the milk supplied from the exclusive ranch[2]. This product is an RT method developed by the Food Science Committee, which consists of Yonsei University faculty, and receives favorable reviews for its rich taste and nutrition[2]. In addition, it was certified as a food safety management certification standard (HACCP) as a systematic manufacturing method[2]. Yonsei Milk also won the “2022 Brand Customer Loyalty Awards” milk category[1]. Yonsei Dairy provides several types of soy milk as well, ranging from black bean soy milk to almond soy milk. Yogurt and health functional food like lactobacillus and red ginseng are also products produced by Yonsei Dairy. 

   One of the most recent products released by Yonsei Dairy are its three types of milk: “Macadamia Chocolate Milk,” "Chodang Corn Milk,” and "Cold Brew Coffee Milk” which have been gaining good reactions from the public. It has exceeded the sales of 1 million bottles within two weeks of its launch[2]. Yonsei Dairy commented that they believe that the design that reflects the taste, quality and characteristics of the MZ generation and the cute handle bottle and cartoon feeling was effective[2].

Yonsei Milk Cream Bread

   Right after its launch in 2022, the popularity of Yonsei Milk Cream Bread began to surge. It caused a "sold out crisis" surpassing 4 million sales in six months after its launch at the convenience store CU[3]. Its demand has shown constant demand as it has surpassed 30 million cumulative sales over 16 months since its launch[4]. It has been speculated that it pioneered the field of "convenience store cream bread" by captivating young people's tastes with various flavors that are difficult to easily access, such as corn, yellow cheese, and salted caramel[5]. Additionally, consumers have particularly been amazed by the abundant amount of cream in the bread. The Yonsei Milk Cream Bread contains an average of 75 to 80 g of cream[6]. Considering that the total volume of bread is 130-150 g, more than half of it is filled with cream[6]. Yonsei Milk Cream Bread has its own special way to put that much cream inside, which is to add the cream manually, not using machines[6].  Recently, "Yonsei Milk Matcha Fresh Cream Bread" was released as the eighth product of the Yonsei Milk Cream Bread series. It is a product that uses Boseong and Jeju tea leaf powder together to conceive the bitter taste of Matcha. White ganache is also added to the cream so that you can enjoy the sweet and bitter taste at once[5].
